How Do You Use a Kuzine Stove Oven? How Hot Does It Get, What Does the Damper Do?
Prepared by: the Yak Gelsin teamLast updated:
Short answer: a cookstove oven is heated by hot flue gases circulating around the oven box, and the oven damper opens or closes that path. Keep it open while lighting, close it once a bed of coals forms. An example manufacturer's manual suggests waiting 1–2 hours before baking. There is no fixed oven temperature; the door thermometer is approximate.
Note: the brands we sell (Petra, Baba's Stove, Ignova) do not publish user manuals online; what follows are general principles from other makers' example manuals. The damper's position and direction vary by model.

How does a kuzine oven heat up?
In a kuzine (Turkish wood cookstove) the fire heats the oven. According to an example manufacturer's manual (ESSE Ironheart), once the fire is established, the oven damper is closed, the hot gases circulate in the cavity between the hob and the oven and heat both the hotplate and the oven. With the damper open, the gases go straight up the chimney; the oven cools but the hotplate over the fire stays hot. Ignova also writes that a wood stove oven's temperature changes with combustion and fuel load.
What does the damper (the rod on a kuzine) do?
The "rod" on a kuzine is usually the damper handle, though on some models it shakes the grate or drops the ash; check yours. Example manuals say:
- Open while lighting: the Elmira Fireview manual wants air to flow freely up the chimney for maximum draft at start-up, then the damper is closed down to heat the oven.
- Open before adding wood: the same manual says to open the damper and wait a few seconds before opening the cook plate or door, so smoke does not spill into the room.
How long should you wait before using the oven?
Fireview says the oven heats quickly once the damper closes, but good results need a strong coal bed: typically 1–2 hours from start-up and 3–4 charges of full-sized wood. It asks for a 4–5 inch (about 10–13 cm) bed of red-hot coals and reloading when the fire drops to that level. Dry wood matters too, as damp wood heats slowly: how much heat wood gives and how moisture affects it.
How hot does a stove oven get, and is the thermometer accurate?
There is no single sourced figure for a kuzine oven; it changes with the fire, fuel and damper, so we give no temperature or cooking-time table. According to example manuals:
- Fireview: the door thermometer shows approximate values, calibrated for "fairly accurate" readings in the 300–400 °F (about 150–205 °C) range; use an interior oven thermometer for accuracy.
- ESSE: because the gauge is fixed to the door, it reads low if the door is left open for long; the oven may actually be hotter.
- Fireview: the oven heats unevenly top to bottom, side to side and front to back; turning the pan now and then gives more even cooking.
How do you raise or lower the oven temperature?
Closing the damper heats the oven, opening it cools it; Fireview notes changes take several minutes to show in the oven. Wider air inlets make a faster fire. According to ESSE, only a small amount of fuel keeps a good cooking temperature.
How do you use the hotplate (cooktop)?
On the ESSE, the side near the fire is for boiling and the far side for simmering; Fireview also suggests sliding the pot to the area with the heat you want instead of turning anything down. The cooktop stays hot long after the fire goes out.
Can you use Pyrex-type glass dishes in a stove oven?
The Fireview manual says not to use glass or glazed ceramic cookware on the cooktop, as sudden temperature changes may break it. For a glass dish in the oven, check its maker's temperature limit. The same manual says not to put foil, pans or baking trays directly on the oven floor; the tray should sit on the rack.
How do you tell when food is cooked?
Since the heat varies, "how many minutes does chicken take" has no reliable answer; check the internal temperature instead. Health Canada gives a safe internal temperature of 74 °C for poultry pieces and 82 °C for whole poultry, and recommends a digital thermometer for more accurate readings.

To choose a model: pellet stoves with a cooktop and kuzine, cast-iron fireplace stove or pellet stove?
How do you clean the oven and hotplate and stop rust?
- Dry it: ESSE says the oven and hotplate will rust if left in contact with moisture, so light the stove after cleaning to dry them, and recommends a light vegetable oil spray to season them; Fireview says to oil only when the stove is cool.
- Clean the channels: Fireview asks for regular removal of soot and creosote from the channels around the oven, so the oven heats evenly. For the chimney: chimney cleaning and stove care.
What does it depend on?
- Coal bed and damper: the oven heats evenly from settled coals with the damper closed.
- Fuel and moisture: dry wood heats faster and more steadily: firewood types. For seasonal needs, use the fuel calculator.
- Model: oven size and thermometer vary by maker.

Safety note
No stove is "smokeless"; wood, coal and pellets all produce smoke and carbon monoxide when they burn. HETAS writes that slumbering overnight at minimal output causes incomplete combustion, creosote and more carbon monoxide. Use a carbon monoxide detector at home; if you get a headache, dizziness or nausea, ventilate, go outside and call 112: stove gas symptoms and CO detectors.
Frequently asked questions
Why won't my kuzine oven heat up?
Usually the damper is open, no bed of coals has formed, or the channels around the oven are clogged with soot.
Can you burn coal in a kuzine?
It depends on the model. The maker lists wood and coal for the Natural 50h, pellets and wood for the Natural Diamond and pellets only for the Natural Atlas.
Why does the thermometer drop when the oven door is opened?
It is fixed to the door, so it reads low while the door is open; ESSE says the oven may be hotter than the dial shows and the gauge recovers once the door closes.
Can a kuzine be left burning overnight?
HETAS writes that burning at minimal output overnight raises the risk of incomplete combustion and carbon monoxide. More in how to prevent stove poisoning.
