In a wood-fired stone oven, wood is not just fuel; it decides how fast the oven heats up, how evenly it holds heat through the day and how the dough bakes. For a pide, lahmacun, pizza or village-bread oven, the wrong wood means an oven that is slow to heat, soot on the dome and an unwanted smoky taste in the dough.
What Should Oven Wood Do?
- Strong, steady heat: heat the oven quickly in the morning and hold the temperature through service.
- Long-lasting embers: a bed of embers that keeps the oven floor hot without constant refuelling.
- Little smoke and soot: no smell in the dough, and a dome and chimney that do not foul quickly.
- Few sparks: a safety issue for the baker working at the open mouth of the oven.
Why Oak?
Oak is a dense hardwood: it packs more wood into the same volume, burns slowly and steadily and holds its embers for a long time. In an oven, that means the floor and dome stay hot longer and you add wood less often. The densest oak variety is yellow oak firewood, which stands out in ovens that need long-lasting embers. You can compare the other varieties on our oak firewood page.

Wood species: 100% oak · Moisture content: 15% - 20% (dry)

Wood species: 100% yellow oak · Bag weight: 30 kg
Dryness Is What Matters
Oak's advantage only shows when it is dry. When green or half-dry wood goes into the oven, part of its heat is spent boiling off its water: the oven heats slowly, smoke pours from the mouth and soot builds up on the dome. According to the US Environmental Protection Agency (EPA), wood burns best at a moisture content below 20 percent; you can check incoming wood yourself with a moisture meter. Well-dried wood is light, has cracked ends and gives a clear sound when two pieces are knocked together.
Choose fully dried oak for an oven. If you buy six-month oak for budget reasons, let it finish drying before use in a stack off the ground, covered on top and open at the sides.
Pine and Other Woods
Pine lights quickly, so pine kindling makes lighting the oven in the morning easier. As the main fuel, though, pine's resin produces more soot and sparks, and it burns out fast. Painted, varnished or pressure-treated wood, plywood and furniture offcuts must never go into the oven; the EPA also advises against burning these materials. In an oven where food is cooked, that rule matters twice over.

Piece Size and Stacking
Pieces sized to your oven mouth and chamber depth make both lighting and placing the wood easier. Thin pieces help start the fire; thicker ones keep it going through service. Tell us the piece size you need when ordering, and we will confirm whether we can supply it.
At the business, stack the wood in a dry, airy place away from heat sources rather than right next to the oven; bring the day's supply close to the oven.
Ordering for Businesses
Record your weekly use for a week or two and split orders to suit your storage space: the shorter the wood waits, the lower the risk of it taking up moisture. Bagged wood is easy to count and carry, which suits small store rooms; loose wood is practical for businesses with plenty of room to stack. For the tonne, bag and stere arithmetic, see how many bags and steres in a tonne of firewood.
We deliver to the door with our own vehicles across İzmir and the surrounding provinces, including Aydın and Muğla; beyond that area we ship by cargo, paid by the buyer. If you run a pide, pizza or bread oven and plan regular purchases, you can request a quote through the institutional supply form.
