At a grill counter, at barbecue evenings in a hotel garden or on a café grill, charcoal directly sets the pace of service and the consistency of the food. For someone lighting a barbecue at home once or twice, small differences hardly matter; for a business running a grill for hours every day, dust, lighting time and ember life are a cost repeated daily. This article covers charcoal choice, storage and season planning for businesses.
Which Charcoal for Which Job?
All our barbecue charcoal is made from oak; the differences are the oak variety and whether it is screened. We explain screening and the difference between red and yellow oak in detail in our barbecue charcoal guide. A short summary for businesses:
- Grill houses and kebab shops with long service: screened red oak barbecue charcoal. Its dense structure keeps the embers going longer, and screening keeps dust low.
- Hotel gardens, cafés and grills that need even heat: screened yellow oak barbecue charcoal. Evenly sized and quicker to light.
- Staff barbecues, picnic areas and budget-first use: red oak barbecue charcoal (unscreened). Economical, but contains more small pieces.

Start With a Trial Order
Charcoal does not behave the same in every grill. Before a large order, try a small batch in your own grill and note: how long it takes to be ready for service, how long the embers last, how much dust is left at the bottom of the bag, and whether it smells or sparks. Your grill cook's opinion is the most valuable data here. Once you have chosen a product, staying with it through the season matters for consistent service.
Storage: Charcoal Hates Moisture
Barbecue charcoal absorbs moisture quickly; damp charcoal is hard to light, smokes heavily and dies quickly. In a business store room:
- Keep bags in a dry, enclosed space, on a pallet rather than directly on the floor.
- Keep the store away from sources of moisture such as the dishwashing area, refrigeration condensate or the open air.
- Keep charcoal away from grills, ovens and other heat sources; never empty ash or half-burnt charcoal near the bags or the store.
- Close opened bags; use the oldest stock first.
Planning Orders Before the Season
For hotels and restaurants in coastal towns the busy period is summer; for city grill houses it runs all year. Either way, planning follows the same logic:
- Measure your use: record how many bags you use in a busy week. As a rough starting point, use the hourly per-grill estimate in our barbecue charcoal guide.
- Split by storage: rather than buying the whole season at once, split it into several deliveries to suit your storage; the charcoal waits less and the risk of damp falls.
- Stock up before the rush: get the first batch into storage before the season opens; avoid last-minute orders in the busy period.
- Keep a reserve: always hold some extra for holidays, wedding season or large bookings.
